Ginger, pomegranate and champagne cocktails

Ingredients

 

4 tbsp sweetener

7.5 cm piece root ginger, peeled and grated

Grated zest of 1 lemon

100g pomegranate seeds

A few drops of Angostura bitters

800ml Champagne or sparkling white wine, chilled

 

Method

 

1) Place the sweetener and 300ml of water in a saucepan, bring to the boil and add the ginger and lemon zest. Cool, then strain and discard the ginger and lemon zest.

 

2) Allow to cool completely and chill for 3-4 hours or overnight if time permits.

 

3) Divide the pomegranate seeds between eight chilled cocktail glasses.

 

4)  Pour the ginger syrup into the prepared glasses, add a couple of drops of Angostura bitters to each one and top up with the Champagne or sparkling wine. Serve immediately.
