Ingredients
1 onion
350g lean ham
1 celery stick, finely chopped
Low calorie cooking spray
250g Arborio rice
850ml chicken stock
2 tsp mixed herbs
200g frozen peas
400g canned sweetcorn
Salt and freshly ground black pepper
Finely chopped fresh parsley
Method
1) Spray a pan with low calorie cooking spray and cook the onion, celery and rice for 5-6 minutes. Add a ladleful of stock and the mixed herbs and stir until the liquid has been absorbed. Continue to cook in this manner, adding a ladleful of stock each time the liquid has been absorbed.
2) Add the peas, sweetcorn and ham and continue to cook until the rice is creamy but still retains a slight bite. Remove from the heat, season well, garnish with parsley and serve.
