Ingredients

 

500g skinless and boneless chicken breasts, cut into bite-sized pieces

2 onions, peeled and finely chopped

2 carrots, peeled and sliced

1 litre chicken stock

500g leeks, trimmed and finely sliced

2 tbsp freshly chopped parsley

salt and freshly ground black pepper

  • Add 6 Syns if not using Chicken (raw weight) as a Healthy Extra on Green.

Method

 

1) Place the chicken, onions, carrots and stock into a heavy-based pan and bring to the boil. Add the leeks and parsley and bring back to the boil. Reduce the heat to low and cook gently for 25-30 minutes or until the leeks are tender, and the chicken is cooked.

 

2) Remove from the heat and season well before serving.
